    Does exposing egg yolks to high heat (as with scrambled eggs) significantly oxidize the cholesterol? How does this fit into oxidized-LDL theory of atherosclerosis?

    I believe it takes long periods of time for high heat to oxidize significant quantities of cholesterol from what I have seen. I am talking about oxidation of LDL membrane PUFAs within the body, not consumption of oxidized cholesterol. I need to do some research to understand the conflicting things I've seen on consumption of oxidized cholesterol.
